🍫 Chocolate Peanut Butter Cake

 

Indulge in this rich and moist chocolate peanut butter cake! With creamy peanut butter frosting and smooth chocolate ganache, it’s the perfect dessert for any occasion.

For the Chocolate Cake:

  • 2 cups (250g) all-purpose flour

  • ¾ cup (75g) unsweetened cocoa powder

  • 1½ tsp baking powder

  • 1½ tsp baking soda

  • ½ tsp salt

  • 1¾ cups (350g) granulated sugar

  • 2 large eggs

  • 1 cup (240ml) buttermilk (or milk + 1 tsp vinegar)

  • ½ cup (120ml) vegetable oil

  • 2 tsp vanilla extract

  • 1 cup (240ml) hot water or hot coffee

For the Peanut Butter Frosting:

  • 1 cup (250g) creamy peanut butter

  • ½ cup (115g) unsalted butter, softened

  • 2 cups (250g) powdered sugar, sifted

  • ¼ cup (60ml) heavy cream or milk

  • 1 tsp vanilla extract

For the Chocolate Ganache:

  • 150g (about 1 cup) dark or milk chocolate, chopped

  • ½ cup (120ml) heavy cream

👩‍🍳 Instructions

Make the Chocolate Cake:

  1. Preheat oven to 170°C (340°F). Grease and line two 8-inch round cake pans with parchment paper.

  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

  3. In another bowl, beat the sugar, eggs, buttermilk, oil, and vanilla until well combined.

  4. Gradually add the dry ingredients into the wet ingredients and stir gently.

  5. Pour in the hot water or coffee and mix until smooth. The batter will be thin.

  6. Divide the batter evenly between the pans and bake for 30–35 minutes, or until a toothpick comes out clean.

  7. Let the cakes cool completely before frosting.

Make the Peanut Butter Frosting:

  1. In a mixing bowl, beat the peanut butter and softened butter until creamy.

  2. Gradually add powdered sugar, mixing well.

  3. Add vanilla and cream, then beat until smooth and fluffy.

Make the Chocolate Ganache:

  1. Heat the cream until hot (but not boiling) and pour over chopped chocolate.

  2. Let it sit for 1–2 minutes, then stir until smooth and glossy. Let it cool slightly.


🎂 Assemble the Cake

  1. Place one cake layer on a serving plate or cake stand.

  2. Spread a generous layer of peanut butter frosting over the top.

  3. Add the second cake layer and frost the top and sides.

  4. Pour the slightly cooled ganache over the top of the cake, letting it drip down the sides.

  5. Decorate with mini peanut butter cups or a drizzle of melted peanut butter, if desired.
