For the Glazed Carrots:

  • 2 cups baby carrots

  • 1 tbsp butter

  • 1 tbsp honey

  • Pinch of salt and black pepper

👩‍🍳 Instructions

  1. Prepare the Chicken:
Preheat oven to 400°F (200°C). In a skillet, heat olive oil and butter. Add garlic, then place chicken pieces skin-side down. Sear both sides until golden brown. Season with Italian herbs, paprika, salt, and pepper.

  2. Bake the Chicken:

  3. Make the Mashed Potatoes:
Boil potatoes until fork-tender (about 15–20 minutes). Drain and mash with butter, milk, and salt. Adjust creaminess as desired.

  4. Glaze the Carrots:
In a small skillet, melt butter, add carrots, drizzle with honey, and season with salt and pepper. Cook on low heat for 8–10 minutes until soft and glossy.

  5. Assemble the Plate:
Serve the chicken with a scoop of mashed potatoes and a side of glazed carrots. Spoon some pan sauce over the chicken and potatoes for that rich, comforting finish.
