What Are Santa Claus Macarons?

Santa Claus Macarons are traditional French almond cookies, sandwiched with a creamy filling and decorated with red and white icing to resemble Santa’s hat, beard, and rosy cheeks.

They’re not just cute — they’re deliciously light, chewy, and full of flavor. You can fill them with your favorite flavors: vanilla, chocolate, strawberry, or even peppermint for a true holiday touch.

Ingredients

For the macaron shells:

  • 1 cup (100g) almond flour

  • 1 cup (120g) powdered sugar

  • 3 large egg whites (room temperature)

  • ¼ cup (50g) granulated sugar

  • Red gel food coloring

  • A pinch of salt

For the filling (vanilla buttercream):

  • ½ cup (115g) unsalted butter, softened

  • 1 cup (120g) powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon heavy cream or milk

For decoration:

  • White royal icing or melted white chocolate (for beard & hat trim)

  • Red icing (for hat)

  • Black edible marker or chocolate (for eyes)

  • Pink edible dust or icing (for cheeks)

  1. 👩‍🍳 Instructions

    1. Prepare the dry ingredients:
Sift almond flour and powdered sugar together into a bowl. Discard any large bits for a smooth texture.

    2. Make the meringue:
In a clean bowl, beat the egg whites and a pinch of salt until foamy. Gradually add granulated sugar and continue whisking until stiff peaks form.

    3. Add color:
Add a few drops of red gel food coloring and mix gently until evenly combined.

    4. Combine the mixtures:
Fold the dry ingredients into the meringue using a spatula. Mix gently until the batter flows like lava — not too thick or too runny.

    5. Pipe the macarons:
Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches) onto parchment paper or a silicone mat.

    6. Rest the shells:
Tap the tray to release air bubbles. Let the macarons rest at room temperature for 30–45 minutes until the surface is dry to the touch.

    7. Bake:
Preheat your oven to 150°C (300°F). Bake for 15–17 minutes, rotating the tray halfway. Let the shells cool completely before removing them.

    8. Make the filling:
Beat butter, powdered sugar, vanilla, and milk until smooth and fluffy.

    9. Assemble:
Pipe a small amount of buttercream onto one shell and sandwich it with another.

    10. Decorate:
Use royal icing or melted white chocolate to make Santa’s beard and hat trim. Draw eyes with an edible marker and add a small dot of pink for his cheeks. Let decorations set before serving.

Tips for Perfect Macarons

  • Always weigh your ingredients for precision.

  • Don’t skip the resting step — it ensures smooth tops and proper “feet.”

  • Use gel food coloring, not liquid, to avoid thinning the batter.

  • Store macarons in an airtight container in the fridge for up to 5 days

💡 Tips: Use peeled, cooked, chilled shrimp for convenience. Add avocado or cherry tomatoes for extra flavor. Keeps well for 1–2 days in the fridge (perfect for meal prep!).

ENJOY.
