📋 Ingredients:

2 cups baby spinach
1 cup kale, chopped
½ cup cherry tomatoes, halved
1 avocado, diced
½ cup cooked quinoa
¼ cup red cabbage, shredded
¼ cup carrots, grated
¼ cup cucumber, sliced
2 tbsp pumpkin seeds
1 tbsp olive oil
1 tbsp lemon juice
1 tsp honey or maple syrup
Salt & pepper to taste
👩🍳 Instructions:
Rinse and prep all vegetables. Pat dry.
In a large bowl, combine spinach, kale, cabbage, carrots, tomatoes, cucumber, and quinoa.
Add diced avocado and pumpkin seeds.
In a small jar, mix olive oil, lemon juice, honey (or maple syrup), salt, and pepper. Shake well.
Pour dressing over salad and toss gently to coat.
Serve immediately or chill for up to 24 hours for meal prep.
