Ingredients:

For the Chocolate Sponge:

  • 4 large eggs

  • 100g granulated sugar

  • 60g all-purpose flour

  • 20g cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp salt

For the Vanilla Cream Filling:

  • 250ml heavy cream

  • 50g powdered sugar

  • 1 tsp vanilla extract

For the Chocolate Ganache & Decoration:

  • 100g dark chocolate, chopped

  • 50ml heavy cream

  • Fresh cherries (about 10-12)

  • Extra chocolate squares for decoration

Instructions:

  1. Prepare the Sponge Cake:

    • Preheat oven to 180°C (350°F).

    • Beat eggs and sugar until fluffy and pale.

    • Sift flour, cocoa, baking powder, and salt, then fold gently into the egg mixture.

    • Spread the batter evenly on a lined baking tray. Bake for 10-12 minutes.

  2. Roll the Sponge:

    • Remove the cake from the oven and let it cool slightly.

    • Place a clean kitchen towel on top, sprinkle with powdered sugar, and roll the cake gently. Allow to cool completely.

  3. Prepare Vanilla Cream:

    • Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.

  4. Assemble the Cake:

    • Unroll the cooled sponge and spread the whipped cream evenly.

    • Place cherries along one edge, then roll the cake tightly.

  5. Chocolate Ganache & Decoration:

    • Heat cream and pour over chopped dark chocolate. Stir until smooth.

    • Cover the rolled cake with ganache.

    • Decorate with extra whipped cream, cherries, and chocolate squares.

  6. Serve & Enjoy:

    • Chill for at least 1 hour before slicing. Serve as a luxurious dessert for any occasion.
