Warm up your January evenings with this cheesy baked winter vegetable casserole. Loaded with seasonal vegetables like carrots, broccoli, and cauliflower, and smothered in a creamy cheese sauce, this dish is perfect for family dinners.
Ingredients
2 cups broccoli florets
1 cup cauliflower florets
2 medium carrots, sliced
1/2 cup shredded cheddar cheese
1/2 cup mozzarella cheese
1/2 cup cream
1 tablespoon olive oil
Salt & pepper to taste
1 teaspoon garlic powder
Instructions
Preheat oven to 375°F (190°C).
Steam or boil broccoli, cauliflower, and carrots for 5 minutes until slightly tender.
In a large bowl, mix the vegetables with cream, olive oil, garlic powder, salt, and pepper.
Transfer to a baking dish and top with cheddar and mozzarella cheese.
Bake for 20–25 minutes until the cheese is golden and bubbly.
Serve warm.
