  • 1/2 cup granulated sugar

  • 4 large eggs

  • 1 tablespoon pure vanilla extract

  • Pinch of salt

1. Prepare the Caramel:

  • In a saucepan over medium heat, combine sugar, water, and lemon juice (if using).

  • Let it cook without stirring until it turns a deep golden color.

  • Immediately pour the caramel into the base of your molds or ramekins. Tilt gently to spread.

2. Make the Flan Custard:

  • In a saucepan, heat milk until just warm.

  • In a separate bowl, whisk eggs, sugar, vanilla, and salt until smooth.

  • Slowly add the warm milk to the egg mixture while whisking constantly.

  • Strain the custard through a fine mesh sieve for an ultra-smooth texture.
