For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • ¾ cup sour cream

  • ½ cup fresh key lime juice (or regular lime juice)

  • 1 tbsp lime zest

  • 1 tsp vanilla extract

  • 1 tbsp all-purpose flour (optional, for thicker texture)

Topping (Optional but delicious!):

  • 1 cup heavy whipping cream

  • 2 tbsp powdered sugar

  • 1 tsp lime zest

  • Thin lime slices or candied lime peel (for garnish)

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (160°C).

  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl.

  3. Press the mixture firmly into the bottom of a springform pan.

  4. Bake for 10 minutes, then let cool while you prepare the filling.

Step 2: Make the Filling

  1. Beat cream cheese until smooth and fluffy.

  2. Add sugar and mix well.

  3. Beat in eggs one at a time.

  4. Mix in sour cream, lime juice, lime zest, vanilla, and flour (if using) until smooth.

Step 3: Bake the Cheesecake

  1. Pour filling over the cooled crust.

  2. Place springform pan in a larger pan and add hot water halfway up the sides (water bath method).

  3. Bake for 55–65 minutes until the center is set but still slightly jiggly.

  4. Turn off oven, crack the door open, and let the cheesecake cool inside for 1 hour.

  5. Refrigerate at least 4 hours, preferably overnight.

Step 4: Topping & Garnish

  1. Whip heavy cream with powdered sugar until stiff peaks form.

  2. Spread or pipe whipped cream on top of chilled cheesecake.

  3. Garnish with lime zest, slices, or candied lime.
