1 lb (450g) chicken livers, cleaned and trimmed
1 cup buttermilk (or milk + 1 tsp vinegar)
1 egg
1 tsp hot sauce (optional, for marinade)
For the Coating:
1 cup all-purpose flour
½ cup cornmeal (optional for extra crunch)
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt
¼ tsp cayenne pepper (optional)
For Frying:
Vegetable oil (for deep or pan frying)

1. Prep the Livers
Rinse and pat dry the chicken livers.
In a bowl, whisk the buttermilk, egg, and hot sauce.
Add livers to the mixture and marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).
2. Prepare the Coating
In a shallow bowl, mix flour, cornmeal (if using), and all spices until well combined.
3. Coat the Livers
Remove livers from marinade, letting excess drip off.
Dredge each liver in the seasoned flour mixture, pressing lightly to coat evenly.
Place on a tray and let rest 5–10 minutes to help the coating stick.
4. Fry
Heat 1–2 inches of oil in a heavy skillet or deep fryer to 350°F (175°C).
Fry chicken livers in batches, about 3–4 minutes per side, or until golden brown and cooked through.
Remove and drain on paper towels. Sprinkle with extra salt if desired.
