    🛒 Ingredients

    For the Fish:

    • 4 white fish fillets (e.g. cod, mahi mahi, or tilapia) 🐟

    • ½ cup coconut milk 🥥

    • Juice + zest of 1 lime 🍋

    • 2 garlic cloves, minced 🧄

    • 1 tbsp soy sauce 🍶

    • 1 tbsp olive oil 🫒

    • ½ tsp ground cumin 🌿

    • Salt & black pepper, to taste 🧂

    For the Mango Salsa:

    • 1 ripe mango, diced 🥭

    • ½ red bell pepper, finely chopped 🌶️

    • ¼ red onion, finely chopped 🧅

    • 1 small jalapeño, seeded & minced (optional) 🌶️

    • Juice of ½ lime 🍋

    • 2 tbsp fresh cilantro, chopped 🌿

    • Salt, to taste 🧂

    For Garnish:

     

    • Lime wedges 🍋

    • Extra chopped cilantro 🌿

    👨‍🍳 Instructions

    1. Marinate the Fish:

    In a medium bowl, whisk together the coconut milk, lime juice and zest, garlic, soy sauce, olive oil, cumin, salt, and pepper.
    Add the fish fillets, turning to coat evenly. Cover and refrigerate for 20 minutes to marinate.

    2. Prepare the Mango Salsa:

    In another bowl, combine mango, bell pepper, red onion, jalapeño (if using), lime juice, cilantro, and a pinch of salt.
    Toss gently and refrigerate until ready to serve.

    3. Cook the Fish:

    Heat a nonstick skillet or grill pan over medium heat.
    Remove fish from marinade and shake off excess.
    Cook for 3–4 minutes per side, until golden and easily flakes with a fork.

    4. Serve:

    Plate the cooked fish and top with fresh mango salsa.
    Garnish with lime wedges and chopped cilantro for a burst of color and flavor.
