Shrimp & Avocado Bowls with Mango Salsa & Lime-Chili Sauce

🥗 Full Recipe – Shrimp & Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients:

For the shrimp:

  • 1 lb (450 g) shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste
  • Juice of 1/2 lime

 

 

For the mango salsa:

  • 1 ripe mango, diced
  • 1/2 red bell pepper, finely chopped
  • 1/4 red onion, minced
  • 1 small jalapeño, seeded and diced
  • Juice of 1 lime
  • 2 tbsp fresh cilantro, chopped
  • Salt, to taste

For the bowl base:

  • 2 cups cooked rice or quinoa
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh greens (spinach, arugula, or romaine)

For the lime-chili sauce:

  • 3 tbsp Greek yogurt or mayo
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1 tsp honey (optional)

 

 

Instructions:

  1. Cook the shrimp: In a pan, heat olive oil over medium heat. Add shrimp, chili powder, paprika, and garlic powder. Cook 2–3 minutes per side until pink. Squeeze lime juice and set aside.
  2. Make the mango salsa: Combine mango, bell pepper, onion, jalapeño, lime juice, cilantro, and salt. Mix well.
  3. Prepare the sauce: Stir Greek yogurt, lime juice, chili powder, and honey until smooth.
  4. Assemble the bowls: Layer rice or quinoa, fresh greens, avocado slices, and shrimp. Top with mango salsa and drizzle with lime-chili sauce.
  5. Garnish: Add extra cilantro or lime wedges for a fresh finish.
