1. Marinate the Fish:
In a medium bowl, whisk together the coconut milk, lime juice and zest, garlic, soy sauce, olive oil, cumin, salt, and pepper.
Add the fish fillets, turning to coat evenly. Cover and refrigerate for 20 minutes to marinate.
2. Prepare the Mango Salsa:
In another bowl, combine mango, bell pepper, red onion, jalapeΓ±o (if using), lime juice, cilantro, and a pinch of salt.
Toss gently and refrigerate until ready to serve.
3. Cook the Fish:
Heat a nonstick skillet or grill pan over medium heat.
Remove fish from marinade and shake off excess.
Cook for 3β4 minutes per side, until golden and easily flakes with a fork.
4. Serve:
Plate the cooked fish and top with fresh mango salsa.
Garnish with lime wedges and chopped cilantro for a burst of color and flavor.
